Today my 1080TI came in the mail, and I installed a 750W EVGA PSU as well. When I boot up, I get an error message, and I realized this is because my hard drive isn’t working (which is where Windows is installed). I have checked my system and my SSD appears, but the HDD does not register to the computer. I can’t even use my PC, since I don’t have an OS. Please help me figure out how to get my HDD working, one thing I have heard is that it can get fried if you use the same cables from the old PSU, but I’m hoping this isn’t what it is.

It sounds like the +12V is missing. Make sure the voltage setting is correct, and re-check your connections. If you have a meter, probe the power connector to the hard drive, with negative on the chassis (or a black wire). You should have +12V DC on the yellow wire, and +5V DC on the red. Bottom line if it’s missing, either the power supply is bad, or shorted out.
