I’m getting my kids IPod Touch 5’s for Christmas, but want to disable (for the time being) all WiFi. Is this process similar to the process you have outlined for the Generation 4 model? Thanks a bunch!

If you have a Mac you can use the Apple Configurator program from the Mac App Store to lock down any iPhone, iPad, or iPod Touch in all sorts of ways, including disabling wifi and preventing anyone from turning it back on (except you of course). For windows there is the iPhone Configuration Utility which may be able to do the same things. Apple iOS Enterprise Resources

Settings-WiFi-Off I think you can also do it in restrictions.
